The Bikini Cocktail

Serves 10 servings

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Drink (produces 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Syrup: Put all the components in a pot, heat until it reaches a light boil, mixing to dissolve. After that, turn off the stove allowing it to cool down entirely. Decant to a sealable bottle, close it and refrigerate it in the fridge, where it will keep for around a month.

To make Batch Mix: Mix all the liquid ingredients in a sizeable container, leave to sit for 60 minutes, then strain best through muslin, to ensure it's perfectly clear.

For serving: Add 85ml of your batch mix into your mixing glass filled with ice, and stir carefully for about 60 seconds to cool it down. Filter into a cold coupe glass or a similar vessel, top with the cranberries and complete it by giving it a brief mist of the essential oil over the top.
